CarrotGinger Sooop
Yields about 6 servings
Ingredients:
- 6 Tblsp. butter
- 1 large yellow onion, chopped
- 1/4 cup finely chopped ginger root
- 4 cloves of garlic, minced
- 7 cups chicken broth
- 1 cup dry white wine
- 1 1/2 lbs. carrots, cut into 1/2 inch pieces
- 2 Tblsp. lemon juice
- 1 pinch (ow!) curry powder
Directions:
- Melt butter in large pot over medium heat
- Add onion, ginger, and garlic
- Saute 15-20 minutes on low heat
- Add broth, wine, and carrots
- boil, reduce heat, simmer on medium heat until carrots are tender)about 45 minutes)
- Puree soup in blender (whirr!)
- add lemon juice, curry, and pepper
